Raw Banana fry (Aratikaya vepudu)

Raw Banana is very good as a fry for side dish ๐Ÿ™‚

Aratikaya fry

Ingredients:

  • Raw Banana – 2 chopped into small pieces
  • Onion – 1/4 ย chopped lengthwise
  • Garlic – 4 cloves roughly chopped
  • Curry leaves – 5 to 6
  • Channa dal – 1 tspn
  • Urad dal – 1 tspn
  • Mustard seeds – 1 tspn
  • Cumin seeds – 1 tspn
  • Oil – 3 tbspns
  • Turmeric powder – 1/2 tspn
  • Red chilly powder – 1 tspn
  • Salt – as per taste

Method:

  1. In a thick-bottom pan, put oil and heat it.
  2. Then add mustard seeds, cumin seeds, channa dal and urad dal. Fry them till they turn light brown in color.
  3. Add onion, garlic, and curry leaves, fry well.
  4. Put the chopped banana pieces into pan, add salt and cover lid to boil the pieces well.
  5. It should be fried till it turns soft.
  6. Then add turmeric powder and chilly powder. Mix well.

This dish can be served with chapathi or rice.

Gaarelu (Masala Vada)

Ingredients:

For Vada:

  • Urad dal – 2 cups
  • Onion – 1/2 finely chopped
  • Green chillies – 2 to 3 finely chopped
  • Ginger – 1 inch piece chopped
  • Curry leaves – 4 to 5 chopped
  • Coriander leaves – handful finely chopped
  • Cumin seeds – 1 tspn
  • Salt – as per taste
  • Oil – for frying

For dal:

  • Moong dal – 1 cup
  • Water – 2 cups
  • Salt – as per taste

Method:

  1. Wash and soak urad dal for 2 to 3 hrs in water.
  2. Grind it in a mixer adding 2 tspns of water. ( Don’t add more water, it must remain thick )
  3. Add chopped onions, ginger, green chillies, coriander and curry leaves to the batter.
  4. Mix it well, put cumin seeds and salt as per your taste.
  5. Put oil in kadai for deep frying. Heat it well.
  6. Wet your palms in water, ย pull a small ball of batter and flatten it on a greased paper or thick plastic cover to get the shape as shown in the picture. Make a small hole in the center of vada so that it will fry well all over.
  7. Put this flattened batter in oil and fry it until it turns golden brown in color.
  8. For dal, we must boil moong dal in a thick bottom pan till it becomes soft to be mashed well. Add salt to it and serve along with vada.

I could not get the shape of vada exactly when i was doing it for the first time…my mistake was that my batter was not very thick. So remember not add too much of water while grinding soaked urad dal. Try making this recipe and tell how you got it…… ๐Ÿ™‚

Ingredients:

  • Strawberries – 8 to 10 washed and sliced
  • Milk – 1 small cup
  • Vanilla ice cream – 1 large scoop
  • Sugar – 2 to 3 tspns
  • Blender

Method:

  1. In a blender, add strawberry slices, milk, vanilla icecream and sugar.
  2. Blend well. Add some more milk if required.

Serve it cold and enjoy in the scorching heat….:)

A very simple recipe as a tea time snack which uses beaten rice (flattened rice) as the main ingredient, is here… ๐Ÿ™‚

Ingredients:

  • Flattened rice – 2 cups
  • Green chillies – 3 finely chopped
  • Curry leaves – 5 to 6
  • Roasted channa dal – 1 small cup
  • Peanuts (groundnuts) – 1 small cup
  • Mustard seeds – 1 tspn
  • Cumin seeds – 1 tspn
  • Oil – 3 tbspns
  • Turmeric powder – 1/2 tspn
  • Salt – as per taste

Method:

  1. Take flattened rice in a microwave-safe bowl and heat it for 1 minute . Then take out from the microwave oven and give it a good mix using fork. Again put it back in the microwave for another minute, and mix it using fork finally. This procedure is required to make the flattened rice crispy before making poha dish.
  2. If you don’t have microwave oven, spread flattened rice on a flat plate and place it under the stove for half an hour when you are cooking any food. This makes it little crispy, quite good though.
  3. Put oil in a kadai and heat it for sometime.
  4. Add mustard seeds, cumin seeds, curry leaves, roasted channa dal, peanuts and fry them well.
  5. Now put green chillies and fry them. Add turmeric powder and switch off the stove.
  6. Now put flattened rice into kadai and mix it along with the tempering.
  7. Sprinkle salt finally and mix it again.

Pavbhaji

Pavbhaji is very famous in western part of India. A healthy and delicious dish.

Ingredients:

  • Pav bread – 4 to 5
  • Potatoes – 4 boiled and mashed
  • Capscicum – 1 finely chopped
  • Peas – 1 cup boiled
  • Carrot – 1 finely chopped
  • Beans – few finely chopped
  • Onion – 1 finely chopped
  • Ginger-garlic paste – 2 tspns
  • Tomato – 1 large finely chopped
  • Green chillies – 2 finely chopped
  • Pav bhaji masala ย – 2 tspns
  • Red chilli powder – 1 tspn
  • Butter – 3 tbspns
  • Salt – as per taste
  • Coriander powder – handful finely chopped
  • Lemon & onions – for garnishing

Method:

  1. Put 2 tbspns of butter in a non-stick pan, heat it for sometime.
  2. Then add ginger-garlic paste and green chillies, saute.
  3. Add chopped onions and capscicum into the pan, fry till they become soft.
  4. Meanwhile boil carrots, beans and peas separetly in microwave oven or pressure cooker.
  5. Add tomato pieces and boil till it becomes paste.
  6. Then add boiled carrot, peas and beans to the pan and mix well.
  7. Add salt, pav bhaji masala & red chilli powder to this mixture and saute.
  8. Finally, add mashed potatoes to the pan, mix and bring it a boil.
  9. After 5 minutes, switch off the stove and add chopped coriander leaves. Bhaji is ready to serve
  10. Now for pav, on a non-stick tawa, add 1 tbspn of butter and place the bottom side of pav on it to fry for 2 minutes or till it turns light brown.

Serve Pav along with the prepared bhaji. Garnish it with chopped onions and add lemon juice if required.

This is my favourite dish, I never miss to eat it whenever I am in Bangalore. ๐Ÿ™‚

Kodubale

A crispy, crunchy appetizer prepared using rice flour, delicious.

Ingredients:

  • Rice flour – 1 cup
  • All-purpose flour – 2 tbspns
  • Dry Coconut powder/ fresh grated coconut – 2 tbspns
  • Butter – 1 small cup (melted)
  • Red chilli powder – 1 tspn
  • Asafoetida – a pinch
  • Sesame seeds – 1 tspn
  • Oil – for frying
  • Salt – as per taste

Method:

  1. In a large mixing bowl, add all the ingredients except oil.
  2. Add water to the mixture and knead well to form a lightly firm dough.
  3. Pull out small ball from the dough, roll it upto 4 inch long and join the ends to form a ring as shown in the figure.
  4. Repeat the same procedure to form the rings.
  5. Meanwhile, heat oil in a kadai.
  6. Put about 6 to 7 rings and fry them in the oil till it turns light brown.
  7. Serve the hot kodubale along with coffee.

Ingredients:

  • Potatoes – 3 boiled
  • Onion – 1/2 finely chopped
  • Tomato – 1 finely chopped
  • Ginger-garlic paste – 2 tbspns
  • Curry leaves – 3 to 4
  • Cloves – 2
  • Cinnamon – 1 small piece
  • Mustard seeds – 1 tspn
  • Cumin seeds – 1 tspn
  • Coriander leaves – handful chopped
  • Oil – 3 tbspns
  • Yogurt – 1 small cup
  • Turmeric powder – 1/2 tspn
  • Red chilli powder – 1 tspn
  • Coriander powder – 1/2 tspn
  • Garam masala – 1/4 tspn
  • Salt – as per taste

Method:

  1. In a non-stick pan, put oil and heat for sometime.
  2. Add mustard seeds, cumin seeds, curry leaves, cloves and cinnamon to the pan and fry well.
  3. Add ginger-garlic paste, chopped onions and fry till it gets soft.
  4. Then add tomato pieces and saute till it becomes paste.
  5. Add salt, turmeric powder, chilli powder, coriander powder, garam masala and little water to boil for 2 minutes.
  6. Add potato pieces and mix it with the sauce.
  7. Add yogurt and let it boil for about 5 minutes or till oil leaves out of the curry.
  8. Garnish with coriander leaves and serve along with rice or chapathi.

Ingredients:

  • Potatoes – 2 boiled
  • Mint leaves – handful chopped
  • Lemon juice – 3 tspns
  • Garlic – 3 pods chopped
  • Turmeric powder – 1/2 tspn
  • Red chilli powder – 1 tspn
  • Salt – as per taste
  • Oil – 3 tbspns
  • Mustard seeds – few
  • Cumin seeds – few
  • Urad dal – 1 tspn
  • Channa dal – 1 tspn
  • Curry leaves – 3 to 4

Method:

  1. In a thick bottom pan, put oil and heat for few minutes.
  2. Add mustard and cumin seeds and let them splutter.
  3. Put curry leaves, urad dal and channa dal to the pan and fry well.
  4. Now add Garlic chops and let them fry.
  5. Cut boiled potatoes into small pieces and add it to the pan.
  6. Add salt, turmeric powder and red chilli powder to it.
  7. Fry for 10 minutes and then add mint leaves. Mix it well and heat it for some more time.
  8. After 2 minutes switch off the stove and add lemon juice. Mix well.
  9. Garnish it with mint leaves before serving.

  • Carrot – 2 chopped finely
  • Beans – 1/4 kg chopped finely
  • Oil – 3 tspns
  • Mustard seeds – 1 tspn
  • Cumin seeds – 1 tspn
  • Channa dal – 1 tspn
  • Urad dal – 1 tspn
  • Garlic – 3 pods finely chopped
  • Roasted channa dal powder – 1tspn
  • Dry coconut powder – 1 tspn
  • Turmeric powder – 1/4 tspn
  • Red chilli powder – 1/2 tspn
  • Salt – as per taste

Carrot beans fry

Method:

  1. Boil carrots and beans in pressure cooker along with little water and salt.
  2. In a thick bottom pan, put oil and heat for sometime.
  3. Add mustard seeds, cumin seeds,urad dal, channa dal, and fry them well.
  4. Put garlic pods in the oil and fry it.
  5. Add boiled carrot and beans peices to the pan. Mix them.
  6. Put turmeric powder, chilli powder and mix well.
  7. Fry for 10 minutes. Then add dry coconut powder, roasted channa dal powder to the fry andmix well.

Serve and enjoy with hot rice or chapathi.

Ingredients:

  • Basmathi rice – 2 cups
  • Carrot – 2 chopped lengthwise
  • Beans – few finely chopped
  • Capscicum – 1 chopped lengthwise
  • peas – 1 small cup
  • Green onions – 1 cup finely chopped
  • Soya sauce – 2 tbspns
  • Garlic – 3 pods finely chopped
  • Onion – 1/4 chopped lengthwise
  • Green chillies – 2 ย finely chopped
  • Black pepper powder – 1 tspn
  • Oil – 3 tbspns
  • Salt – as per taste
  • Tomato sauce (optional)

Method:

  1. Cook rice in pressure cooker or rice cooker by adding little salt and 1 tspn oil.
  2. In a non stick pan, put oil and heat for some time.
  3. Then, add garlic, green chillies and onion pieces, fry well.
  4. Add the chopped vegetables, salt, pepper powder and fry well.
  5. Boil the vegetables without closing the pan lid. Stir occassionally in between.
  6. Add soya sauce and green onions, mix it well. Cook for two more minutes and switch off the stove.
  7. Now add cooked rice to this and mix thoroughly, add tomato sauce if desired.

Serve it hot with tomato sauce… ๐Ÿ™‚
